Citrus Upside Down Cake

My favorite cake growing up was a pineapple upside-down cake. My mom made it for me every year for my birthday, and I loved how gooey and sweet it was. This time of year, there is so much beautiful citrus available to us, and I wanted to bake a cake that incorporated some of those flavors and colors. I thought the tartness of the fruit mixed with the richness of the cake would be the perfect combination. This cake is not only gorgeous but so delish!


Ingredients:

2 Blood Oranges

2 Cara Oranges

1 Lemon

1 Lime

2 Clemontine’s

1 Grapefruit

1 cup Sugar

7 tablespoon Melted Butter (for bottom of the cake pan)

1/2 cup Melted butter (for cake)

1 1/2 cup Flour

1 cup Milk

2 Eggs

1 teaspoon Vanilla

1 1/2 teaspoon Baking Powder

1/2 Salt

3/4 cup Brown Sugar

Preheat oven to 350.

Start by zesting one of the oranges, lemons, and limes before peeling the fruit. Save in a bowl and set aside.

Using a paring knife to remove the skin from the citrus, slice the fruit into rounds and set aside.

In a 9 in. greased cake pan, start to lay the fruit in the pan until the whole bottom is covered.

Add an even layer of brown sugar over the fruit, and top with melted butter.

Add sugar, melted butter, eggs, 2 teaspoons zest and vanilla in a mixing bowl, and whisk.

Add flour, salt, and baking powder in a separate bowl and combine.

Slowly add flour and milk in separate increments until fully combined.

Pour batter into the cake pan.

Place in oven and bake for 25-30 until the cake is golden brown and a cake tester comes out smooth.

Let cake cool for 5-10 minutes.

Take an off-set spatula and slowly run it around the edge of the cake to loosen it from the pan.

Place the serving plate on top of the cake pan and carefully invert the pan, so it is upside down on top of the platter. Remove the cake pan. You may need to replace a slice or 2 of fruit that stuck to the pan.

I like to serve this with vanilla ice cream or whipped cream. Slice and enjoy. I feel like these flavors help me feel like the sunshine is coming, or that could be the Champagne talking.
