Crispy Chicken Tacos
Tacos are a staple at our house. We probably have some version of them once a week. But why the hell not? They are so tasty and easy to make! I have been trying to find a fun new way to make them, and I think I succeeded. Placing them in the oven, completely assembled with all the yummy filling, melts everything together and crisps up the shell. This has turned into the only way we make tacos now.
Ingredients:
Street taco corn tortillas
1 cup Shredded Cheddar cheese
1/4 Fresh cilantro chopped
2 Chicken breasts shredded (I will add this to my crock pot in the morning with a pouch of Frontera seasoning so it’s ready to go at dinner time.)
4 Tablespoons Melted Butter
Turn oven to broil
Lay out a few taco shells at a time to make assembling easier.
Add a small spoonful of chipotle sauce to each shell.
Top half the shell with chicken cheese and a sprinkling of cilantro.
Fold over the taco shell and press down firmly to keep it closed.
Using a pastry brush, coat the outer shell with butter and give them a sprinkle of salt.
Place tacos in the oven under the broiler. DO NOT WALK AWAY!! Any time I walk away, they burn every damn time, so I usually just stand and watch.
Pull them from the oven once they look crispy, and the cheese has melted.
I like to sprinkle them with some cilantro and a drizzle of chipotle sauce.
Pour some tequila and enjoy taco night.
